Baihao Yinzhen (白毫银针,White Hair Silver Needle)，found in 1796, belongs to white tea, one of China’s six major teas. Its origin is Fujian province, the main producing areas are Fuding, Zhenghe, Songxi, Jianyang and other places, is one of China’s ten famous teas, known as “beauty” and “king of tea “. It is straight and upright like needle. The pekoe is same as silver and snow white.
As raw materials are all tea buds, after made of finished tea, the shape of Baihao Yinzhen is like needle, the surface is full of Pekoe, its color is white and silver, so named Baihao Yinzhen. Its needle shaped tea is about three centimeters long.
The picking standard of Baihao Yinzhen raw material is, when the young shoots of spring tea germinate, a bud is about to be harvested, then gently peel the true leaves and the fish blades with your fingers. The peeled tea buds are evenly thin and spread out on the water screen (A kind of bamboo sieve), do not overlap, placed them in weak sunlight or ventilated shade, cooled to eighty or ninety percent of dryness, then used the baking cage at 30-40℃of slow fire to bake it until it’s very dry. Also, with the sun instead of baking cage to dry all, the finished tea is named wool needles. Picking tea bud with fat needle from wool needles, then removing the stalk manually (commonly known as silver needle foot), sieving and picking out leaves, debris, impurities, etc., then using slow fire to dry, packing them while hot.
Baihao Yinzhen currently mainly exported to Southeast Asia, Germany and the United States. In early Europe, the people will add some white hair silver needles while drinking black tea to show it is rare.
